Classic Solyanka: The Ultimate Soup for Cold Days 🍲

The Ingredients

  • The Meats: Assorted smoked meats (smoked sausage, ham, beef, etc.).
  • The Base: 1 large Onion (chopped), 2 tbsp Tomato Paste, Beef Broth.
  • The Tang: Pickles (sliced) + a splash of pickle brine, 1/4 cup Capers.
  • Garnish: Sour cream, fresh lemon slices, fresh dill.

 

The Process

  1. Build the Base: Sauté the chopped onion until soft and translucent. Stir in the tomato paste and cook until fragrant.
  2. Add the Meats and Pickles: Add your assortment of chopped smoked meats, sliced pickles, and capers to the pot.
  3. Simmer: Pour in the beef broth and a splash of pickle brine for that signature tang. Let the soup simmer on low heat for about 30 minutes so all the bold flavors meld together.
  4. Finish & Serve: Remove from heat. Serve hot, garnished with a dollop of sour cream, a slice of lemon, and fresh dill.
