Yeast Blini with Red Caviar

Thin, golden, slightly chewy pancakes made with yeast and stacked while warm. Topped with chilled red caviar, no garnish needed. Simple, clean, and balanced.

Best served with Zina’s Classic Egg Salad for a cold, crisp side.

 

Ingredients

  • 2 cups warm milk
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 1/4 tsp active dry yeast
  • 1 3/4 cups all-purpose flour
  • 2 eggs
  • 3 tbsp neutral oil or melted butter
  • Extra butter for cooking
  • Red caviar for serving

 

Instructions

  1. Prepare the base – Combine warm milk, sugar, and yeast. Let it sit until bubbly (about 10 minutes).
  2. Make the batter – Whisk in flour, eggs, salt, and oil. Cover and let rise for 1 hour.
  3. Cook the blini – Heat a buttered pan over medium. Pour a thin layer of batter, swirl, cook until golden on both sides. Repeat.
  4. Assemble – Stack and top with red caviar. Serve warm or room temp.

 

Tip: Don’t overfill the pan. Blini should be thin and flexible, not thick and heavy.
