Private Label Deli Salad Manufacturing
Refrigerated deli salads sit in one of the most established prepared-food categories in American grocery, and they reward partners that can hit the right combination of flavor, freshness, food safety, and shelf life. Zina's Fine Foods has been producing deli salads under retailer and brand-owner labels for four decades, with current SKUs in more than 7,000 stores across 40 states.
Categories we cover
The deli salad lineup includes American classics and category extensions. Active recipes include egg salad, classic tuna salad, coleslaw, macaroni salad, red bliss potato salad, mustard potato salad, chicken salad (white meat, dark meat, and curried variants), carrot and raisin salad, and broccoli salad. Each recipe is available as a stock formulation or as a starting point for a custom version tuned to your retail or foodservice program.
What private label production looks like
You bring the brand and the positioning. We bring the recipe development, the regulatory paperwork, the production lines, and the supply chain. A typical new program starts with a kickoff brief, moves into 2 to 3 weeks of R&D, runs a pilot batch for taste testing and shelf-life confirmation, and then transitions into scheduled production.
Format flexibility
The South Plainfield plant runs multiple packaging formats on the same week: single-serve cups (5, 7, and 12 oz are the most common), deli counter tubs (1 to 5 lb), and foodservice bulk packs. Heat-sealed lids, modified-atmosphere packaging, and standard-seal formats are all available. Private label film, sleeve, and label artwork can be specified by the brand owner or designed in cooperation with our packaging partners.
Regulatory and safety
The South Plainfield facility is SQF certified under the Safe Quality Food scheme (a GFSI-recognized food safety standard) and HACCP compliant. The facility also holds Halal certification. Cold-chain control is documented from raw ingredient receiving through shipping. Each lot is tracked individually for recall capability.
Why retailers move private label deli salad to a dedicated manufacturer
Deli salads have a short shelf life, demand careful ingredient sourcing (especially around eggs, dairy, and seafood), and need consistent batch-to-batch flavor that consumers can trust. In-store production at the deli counter is labor-intensive and inconsistent. A central commissary or contract manufacturer like Zina's lets a retailer offer a private label line at scale without taking on the food safety and HR overhead of in-store deli production.
The 2026 wave of clean-label demand also favors dedicated manufacturers. Buyers increasingly ask for shorter ingredient lists, no artificial preservatives, sunflower instead of canola oil, and locally sourced produce when seasonal. Recipe-level changes are far easier to manage at a single contract plant than across hundreds of store-level kitchens.
