Private Label Macaroni Salad Manufacturer

Private Label Macaroni Salad Manufacturing

Macaroni salad is one of the steadiest categories in American grocery deli. The recipe is simple, the customer base is loyal, and the price point allows healthy margins for retailers and brand owners. Zina's Fine Foods has produced macaroni salad under private and retailer labels since the company started in 1983.

Recipe styles we produce

American homestyle. The category benchmark: elbow macaroni in a creamy mayonnaise dressing with celery, bell pepper, and onion, balanced with a touch of sugar and vinegar. This is the recipe most retailers want for a default private label macaroni salad SKU.

Hawaiian-style. Sweeter dressing, often with grated carrot and a hint of pineapple or sweet relish. A regional favorite that travels well to other markets when paired with the right packaging.

Bacon ranch. Smoky bacon, ranch-seasoned mayo, and chives. A higher-price-point variant for retailers building a premium deli salad tier.

Reduced-sodium and clean-label variants. For private label programs targeting cleaner-label shoppers, we can reformulate any base recipe to cut sodium 25 to 40 percent, remove EDTA or other functional additives, and switch from canola or soybean oil to sunflower oil in the dressing.

Vegan macaroni salad. Made with a vegan mayonnaise base (cashew or aquafaba), suitable for plant-based private label lines.

What the production looks like

Pasta is cooked in our continuous water cooker, drained, cooled in a water bath, and held at refrigerated temperatures until dressing. Vegetables are prepped fresh daily. The dressing is blended in a separate room, then combined with pasta and vegetables in a chilled mixing tank. Finished salad is packed into the buyer's specified format (cup, tub, or foodservice bulk pack), sealed, date-coded, and palletized for shipping.

Shelf life

Standard refrigerated shelf life is 21 to 28 days from production for mayonnaise-based macaroni salads at 33 to 39 degrees F. Shelf life can be extended with modified-atmosphere packaging where the retailer's distribution model supports the higher packaging cost.

Packaging

Common formats: 7 oz single-serve cup, 16 oz family pack, 3 lb and 5 lb deli counter tubs, and 10 to 25 lb foodservice bulk packs. Custom sizes are available. Label, sleeve, and lidding artwork can be supplied by the brand owner.

Why private label macaroni salad works

Macaroni salad is bought on three signals: it looks fresh, it tastes balanced, and it sits at a familiar price point. None of those depend on a national brand name. A retailer's private label macaroni salad, if it is produced consistently and packaged well, can capture the full margin without the brand premium. That is the reason most major US grocery chains have a private label deli salad line, and it is the reason macaroni salad is one of the most common SKUs in those lines.

Engagement and minimums

Minimum order quantities for first runs start at 300 pounds, which makes it practical to launch a pilot program and validate sell-through before committing to a larger production schedule. Established programs ship in multi-thousand-pound weekly windows. R&D for a custom recipe takes 2 to 3 weeks; recipe-license programs (using our existing homestyle formula) can ship within 4 to 6 weeks of contract signing.

Certifications and food safety

The South Plainfield, NJ plant is SQF certified, HACCP compliant, and Halal certified. Lot-level traceability is documented for every batch. Audit records are available to qualified buyers under NDA.
